Title: Lekvar (Prune Filling for Hamantaschen)

Yield: 1 Servings

1cRaisins water
1 Jar (15 oz)cooked prunes
1/4cSugar or honey
1tsLemon juice
1cWalnuts or pecans, crushed (opt)

In a small, add water to the raisins to cover & let soak overnight. Drain. In the bowl of a food processor, combine the prunes, drained raisins, sugar or honey, & the lemon juice. Blend to a fine paste. Remove the mixture to a mixing bowl & stir in the crushed nuts, if you desire. Cover & refrigerate for several hrs. This mixture is easier to h&le when it is cold. Makes 3 to 4 cups of filling.

NOTE: The best lekvar (prune filling) I have ever tasted from Paprikas Weiss. And luckily for everybody who does not live in New York City, you can buy from them mail-order at the address below:

This prepared filling is delicious & I think that making your own from scratch is a waste of time & effort. If you feel guilty doing something so easy as to take a filling straight from a jar, stir 1 cup of crushed walnuts or pecans into 3 cups or 3, 8 ounce jars of lekvar.
